The name Digestive came from the Victorian belief that biscuits loaded with soda aided the passing of food. Mrs Beeton herself recommended them for good health. Thankfully, our digestives have moved on from such austere beginnings. Theyre still wholesome but now theyre also buttery and decidedly melt in the mouth.
